In honor of breakfast month this September, what better way to celebrate than to indulge in breakfast for dinner? I love pancakes, crepes, muffins and French toast so this actually should be my favorite month of the year! I do love cooking and testing recipes but have shied away from making my own pancakes from scratch–I usually go for pre-made brands. In a recent survey, it was found that 91 percent of Americans are eating breakfast for dinner, and I can’t blame them.
Below is my new favorite variation on traditional pancakes. Go crazy and have them for dinner.
I recently grabbed a box of Krusteaz Buttermilk Pancake Mix and made their recipe listed. Then I poured the batter onto a griddle and sprinkled them with 1 tablespoon of granola. After they were cooked and cooled, I added yogurt, fruit (I love strawberries) and more granola. I folded them and had dinner in 30 minutes start to finish.
